
I think that this has to be one of my favorite recipes ever. Not only because it makes a wonderful meal but because of the memories that are attached to it. I think every person has at least one meal that just takes them back in time. This one is mine.
Growing up, there was this southwest cuisine restaurant called Tumbleweed. It was mine and my parents favorite restaurant, which was probably a good thing with how often I asked to eat there. I had two favorite dishes that I would always get. One was a rainbow trout that was so tender it literally melted in your mouth. The other was called Chicken Cheyenne.
The restaurant has since closed down, but when I was in high school, my mom surprised me by figuring out how to make Chicken Cheyenne at home! It is still to this day, one of my favorites to cook as well as to eat. Below I have shared the recipe with you and also thrown in some notes from how I cook it.

Chicken Cheyenne
Ingredients
- 4 chicken breast (frozen or fresh)
- 1 can of mushroom stems & pieces
- Monterey Jack Cheese (block or slices)
Cooking Instructions
Oven
- Preheat oven to 350 degrees.
- Line a baking sheet with aluminum foil.
- Place your chicken breast on the baking sheet and add seasonings of your choice (I frequently use just salt & pepper or seasoned salt).
- Close to each breast, place a small dollop of butter.
- Cover entire tray tightly with aluminum foil to trap the moisture inside the breasts.
- Bake for 25 to 30 minutes or until meat is fully cooked.
- Place mushrooms on top of each chicken breast and top with sliced Monterey Jack cheese.
- Return tray to oven without covering until cheese has melted.
- Allow to cool slightly. Serve with baked potato and a vegetable.
Stove/Microwave
- Fill saucepan with water and bring to a boil.
- Add chicken breast.
- Boil until chicken is fully cooked.
- Place chicken breasts on serving plates.
- Top with mushroom stems & pieces and Monterey Jack cheese.
- Microwave for 30 seconds or until cheese is melted.
- Serve with cooked sweet carrots and Knorr rice sides.
